Meet Our Founder
Chef Mary Jayne Wilson | Owner and Executive Chef
A North Carolina native from the small town of Richfield, she now calls Charlotte home. Some of her earliest memories are of visiting local strawberry farms each spring, picking fresh blueberries and tomatoes in the summer, and spending fall afternoons at the pumpkin patch. Those experiences sparked a lifelong appreciation for food and the abundance of fresh, seasonal produce grown across North Carolina.
Her culinary career began in the kitchen of a small-town restaurant in Gold Hill, North Carolina. It was there that she discovered not only a passion for cooking, but also the joy of feeding people and being part of a community. She later attended Johnson & Wales University in Charlotte, where she earned an Associate of Science in Baking & Pastry and a Bachelor of Arts in Food Service Management.
After graduation, she spent years working in independently owned restaurants and bakeries throughout Charlotte, building experience and developing her own style. In 2019, she was named runner-up in the North Carolina Restaurant & Lodging Association Chef Showdown and was selected as a Chef Ambassador for the North Carolina Department of Agriculture. In that role, she works to promote North Carolina agriculture while supporting the farmers and producers who make the state's food scene so special.
She spent the next nine years as Director of Operations and Executive Chef at Amélie's French Bakery before taking the next step in her career by opening Thoughtful Baking Co.
Chef Mary Jayne believes the best food starts with great ingredients and thoughtful preparation. North Carolina's changing seasons continue to shape the way she cooks and bakes, with local produce serving as the foundation for much of her work. Whether she is growing plants, raising three young children, or building a business, she brings the same sense of purpose, creativity, and care to everything she does.
After nearly two decades in Charlotte's culinary community, opening Thoughtful Baking Co. felt like the natural next step. The bakery reflects her commitment to simple, delicious food made with quality local ingredients and a genuine love for sharing it with others.
We have chosen to create simple, quality food that touches that spot inside all of us, of deep comfort, that only food can bring. We have thought through every detail to make sure that what you get exceeds expectations.
We focus on comfort food, made the old fashioned way by hand, using locally sourced ingredients.

Our menu is constantly evolving based on which harvest season we’re in and the produce we can source from local farms and food growers. We do offer a few staple menu items that are available all year round like our Pot Pies, Quiche and Shepherd’s Pies.
Made from scratch butter crust, using NC flour, filled with carrots, onions, celery, peas, potatoes and pasture-raised chicken, chicken stock, rosemary, thyme, salt and pepper.

Do you deliver?
We do not currently, but we offer in-store pickup at our storefront.
What are the pot pie baking instructions?
Individual Frozen Pies: Bake at 350* for 1hr 45 min or until crust is golden and filling is bubbly.
Family Size Frozen Pies: Bake at 375* for 1 hour 3o-45 min or until crust is golden brown and filling is bubbly.
What is in your pot pies?
Chicken
Crust - King Arthur and North Carolina flour, butter, Earth Balance buttery spread, salt, water.
Filling - pastured raised chicken, chicken stock, butter, flour, carrots, onions, celery, potatoes, peas, thyme, rosemary, salt and pepper.
Vegan Veggie
Crust - King Arthur and North Carolina flour, vegan butter, salt, water.
Filling - vegetable stock, King Arthur flour, Earth Balance buttery spread, carrots, onions, celery, shiitakes, potatoes, sweet potatoes, thyme, rosemary, salt and pepper.

Which ingredients are locally sourced?
We source locally whenever possible. We change our menu with the seasons which allows us the opportunity to support a number of local farms for different produce throughout the year. Our most featured farms are:

How many people will pot pies feed?
The family size feeds about 4 people.
Individual is a large serving for one, or could possibly be split by two. We recommend making a salad to go with it, if you are sharing.
Can I put them in the freezer?
Yes! We highly recommend getting a few and keeping them in the freezer. You can order them frozen , for stocking the freezer and fully baking in the comfort of your own home. If you ordered one for reheating and for some reason do not eat it within three days of receiving it, they can be frozen, as well, for up to two weeks.
